Cupcake heaven

Like most people I loveeeee cupcakes. In the last few years cupcakes have taken on new popularity. Trendy shops have opened up all over the Uk selling these uber cute tweets. Myself personally I love to make them esp for party's and special occasions. I love how you can decorate them to fit into any theme and decorate them in so many ways and be as creative as your imagination will allow you.
There is nothing better than getting the kids involved Lola-Rose loves baking with me its a fantastic mother daughter activity to do together, I have such fond memoires of baking with my mum.

Cupcakes have made many appearances in pop culture. Magnolia Bakery in Manhattan was featured in an episode of the hit TV series “Sex and the City,” After Carrie Bradshaw bit into a cupcake on Sex and the City, it wasn't long before beautiful frosted cupcakes took the world by storm. http://www.magnoliabakery.com/home.php Celebrities have also drawn attention to cupcakes by flocking to bakeries in L.A. and Hollywood. Celebrity cupcake haunts include Sprinkles, Auntie Em’s, Sweet Lady Jane and Susie Cakes in L.A. My favourite cupcake recipe of all time is

Vanilla Cupcakes
250 g unsalted butter, softened
250 g caster sugar
4 eggs
1 tsp natural vanilla extract
185 g self-raising flour
60 g plain flour
185 ml milk
For the icing:
1. For the cakes: preheat the oven to 180C/gas 4. Grease a 12-hole 125ml non-stick muffin tray.
2. Put the butter and sugar in a bowl and beat until pale and creamy. Add the eggs, one at a time, then add the vanilla and beat until well combined. Sift the flours together and fold in while adding the milk. Stir until almost smooth.
3. Divide the mixture between the muffin holes then bake for 20 minutes. Remove from the oven and leave to sit for 10 minutes in the tin. Turn the cakes out onto a wire rack to cool.

White Icing Recipe
2 cups solid shortening (crisco or Trex)
1/2 cup milk (may need an additional 2-3 Tblsp)
2 lbs powdered sugar
1 teaspoon clear vanilla flavor
Food colouring of your choice

Cream shortening and milk with flavors. Slowly add powdered sugar, beating at a medium speed until well blended. Add colouring till you get the desired colour.
